Puddin' Time

I was making nutmilk this afternoon when I realized I still had not found a good use for the leftover pulp. I had tried a few online recipes but never really fancied any of them. Today, however, I experimented and found me some creamy goodness. The following measurements yield one serving of pudding from almost one cup of pulp.

3/4 cup cashew pulp
3 frozen strawberries
2 tbsp of shredded coconut
1/2 cup filtered water
2 tbsp flax meal
1/2 banana

Mix in blender until smooth. Store in fridge until cool or add ice cubes while blending for an instant treat. Feel like a kid again.

You're brilliant (duh). I hate chucking my nut mylk pulp, so I will have to give this a try. Yum yum.
